Dear Sir/Madam,
In general, traditional markets in Thailand and across Southeast Asia are open-air markets, and it is common for fresh meat to be displayed outside of refrigerators. There are a few exceptions, such as Singapore, where food handling regulations are different.
We have been sourcing our ingredients from these markets since our cooking school opened in 2015. For our morning classes, we purchase ingredients from Bang Niang Fresh Market, while for our afternoon classes we use Ruamjai Market or Khuk Khak Market. The meat we purchase is always fresh. For morning classes, we buy it early in the morning, and for afternoon classes we purchase fresh chicken from the afternoon market and refrigerate it immediately upon returning to the school. We are not sure which market tour you joined.
We have tried to identify which customer you are because we would like to know the date you attended the class and understand the circumstances of that day. If you became ill as a result of eating food prepared during our class, we are fully prepared to investigate the matter and provide you with a full refund.
Since opening, we have only had one previous report of suspected food poisoning. After conducting an investigation, only one of the five participants in that class became ill afterward. We could not confirm whether the illness was caused by our food, but we still chose to provide a full refund to both guests involved.
In your case, we would have appreciated it if you had contacted us directly before posting your review. This would have allowed us to investigate the quality of the ingredients used that day, check with your fellow classmates, and resolve the matter appropriately, including issuing a refund if necessary. In some cases, guests experience stomach discomfort not because of contaminated food, but because they are not accustomed to eating spicy or richly seasoned dishes. Each class includes four to five different dishes, so there are many possible factors.

You also mentioned that you “didn’t actually learn anything” because everything was done for you. I would like to clarify how our classes work. We prepare and organize the ingredients before class so that everyone can begin cooking efficiently. However, every guest has their own cooking station, ingredients, knife, wok, pan, and equipment. You chop the ingredients yourself, prepare the dishes yourself, and cook everything yourself under our guidance. We teach every step carefully, including making homemade sauces and curry pastes completely from scratch.
I am therefore not entirely sure what you meant by your comment. Were you expecting to wash the vegetables and prepare every ingredient from the very beginning? Our class is designed to focus on learning authentic Thai cooking while making the best use of the class time.
Finally, after reading your review, I wonder if your overall experience may have been influenced by the market visit itself. Some visitors find the sights, smells, heat, and atmosphere of a traditional Southeast Asian market overwhelming because it is very different from what they are used to. This is completely understandable. On the other hand, many guests find these markets fascinating and see them as one of the highlights of their trip, thanks to the incredible variety of tropical ingredients available. I remember one guest from Germany telling us that the market was absolutely amazing because he discovered so many unique ingredients that he had never seen and could not find in his own country.
Once again, I sincerely regret that you had an unpleasant experience. I kindly ask that you contact us using the details above so we can verify your identity, investigate the situation thoroughly, and resolve the matter fairly.
Yours Sincerely,
Wandee Rathanapan
